I have been really skeptical to try Follow Your Heart vegan eggs which are literally fake eggs for vegans. I’ve heard on social media that the taste was bland so I stuck with my tofu scrambled eggs for the majority of my plant-based breakfasts. But, as a one-time lover of eggs, my favorite meal was a well seasoned stuffed omelet and a tofu scramble couldn’t satisfy my omelet cravings.

Since I normally rant and rave about Just Egg, on a grocery shopping trip my partner decided I should give this Follow Your Heart VeganEgg a try.

Follow Your Heart Vegan Egg is a gluten-free, dairy-free vegan egg substitute. Unlike my all-time favorite Just Egg which is made from mung beans, the Follow Your Heart Vegan Egg is soy-based but more specifically Non-GMO soy-based.

I have to say, when I tried the Follow Your Heart Vegan Egg, I was genuinely surprised. The texture was spot on and after adding extra seasoning and black salt to egg up the flavor even more I can say that I thoroughly enjoyed it. I was even more excited about the fact that I can now make an omelet again.

Here’s the thing, when it comes to vegan eggs, the main flavor missing from the taste is the very distinct eggy flavor that eggs have naturally. Fortunately for us plant-based foodies, nature made a perfect replacement called black salt also known as Kala Namak. This salt has the sulfuric scent and taste of eggs. If I’m making “eggs” for breakfast, black salt is a must. I keep it stored in an airtight container because that sulfuric smell will take over the whole cupboard if I’m not careful.

So where do you buy vegan eggs?

I’ve been seeing more plant-based options in generic supermarkets which is great because that means there’s more demand for plant-based meat alternative food. To make your search even easier, Follow Your Heart has a product location finder on their website. just enter your zip code and you’ll have the nearest store that carries their products.

On to this delicious recipe:

Here’s what you’ll need

2 tbsp VeganEgg

1/2 cup Cold Water

1 tbsp Nutritional Yeast

1 tsp garlic powder

1/8 tsp Black Salt / Kala Namak

1 tbsp onion (chopped)

1/2 stalk of scallion

1/2 tbsp Earth Balance Vegan Butter

A handful of Spinach

1/2 avocado (optional)

salsa (optional)

Directions:

In a bowl combine VeganEgg mixture with nutritional yeast, garlic powder, and black salt.

Add 1/2 cup of cold water and whisk vigorously for 2-3 minutes

Add chopped onions and scallion to the mix and whisk to combine ingredients

In a non-stick skillet, add vegan butter and wait till it’s melted

Pour egg mixture into the pan and spread evenly

Cook for 3-4 minutes on low-medium heat

Flip the omelet and add spinach on half of the omelet. It makes it easier to fold.

Fold the empty side of the omelet over the other half

Use the spatula to press the sides together.

Keep flipping the omelet until the desired doneness is achieved.

Serve omelet topped with avocado and salsa. You can enjoy the omelet with your favorite bread. I use the 7 Sprouted Grain Bread from Food For Life.

Sprinkle a pinch of salt on top to boost the flavor. This is completely optional.

So there you have it, an actual omelet that wasn’t made from chicken eggs.

Let me know how it goes if you try this recipe.

Happy Cooking!
